Wild hamo (pike conger) shabu-shabu

summer onlyWild hamo (pike conger) shabu-shabu

Ultra-premium live hamo caught in the sand flats of the Kii Channel.
The landlord of this lodge, who is also a chef, is trained to expertly cut the bone of hamo using sophisticated techniques, earning our dishes a reputation for being a cut above the rest.
Hamo meat is prepared in a way that keeps its bones from poking your tongue, and it gets curled like a flower when you put it in a hotpot—making it as beautiful as it is delicious.

Wild longtooth grouper dishes

winter onlyWild longtooth grouper dishes

We also offer rare premium fish, longtooth grouper.
We use only the finest wild longtooth grouper, which is best cooked in a hotpot to bring out the delicious fat, springy texture, and savory flavors.
We have plenty of fans that keep coming back for this amazing dish.
Wakayama is known for its wild longtooth grouper, so make sure you try it while you’re here!
